 Fermex® Fermolite LC12

Fermolite LC12 has been devised and formulated to enable producers of baked goods to provide customers with low impact carbohydrate and low glycaemic products. The product has been designed for all baked goods, with the opportunity for customers to tailor make their own formulations to give unique products.

Fermolite LC12 has been developed for use as a partial flour substitute, and formulations typically comprise wheat flour and Fermolite in the ratio 44%/56%. The resulting final products have a “net impact” carbohydrate reduction of over 30% and an energy value reduction of over 25%

In addition, Fermolite LC12 contains polydextrose, a functional, prebiotic ingredient comprising 90% fibre.

Fermolite LC12 is produced from a special maize starch, polydextrose and wheat protein, and includes its own specially developed improver to ensure maximum dough stability, tolerance, volume and a fine crumb structure. No other ingredients other than wheat flour, yeast, salt and water are required to produce good looking and good eating low carbohydrate baked goods.

Nutritional Labelling:

The labelling of polydextrose is not currently covered under the EU Nutrition Labelling Directive. In the UK, it may be listed as a separate line under the carbohydrate content, listed as a separate line under the fibre* content, or on its own.

Bread made to the basic Fermolite LC12 recipe above would require the following ingredients declaration:

Flour, maize starch, bulking agent (polydextrose), wheat gluten, yeast, salt, emulsifiers (E471 and E472e), hydrogenated vegetable oil, maltodextrin, flour treatment agent (E300)
